What a great time of the year, our farmers at the Phoenix Hill Farmer's Market have an abundance of fabulous produce. The tomatoes are ripe so we thought we’d share the perfect Gazpacho recipe…it helps to stay cool on these hot summer days.
The Bodega’s Gazpacho
Dice one large onion 3 Tbls of white wine vinegar
Dice 2 green peppers 1 Tbls of olive oil
Dice 8 fresh tomatoes 3 cloves minced garlic
1 can of tomato juice (25-30oz) 6 drops Tobasco sauce
Skin and dice 1 large cucumber
Place into a larg bowl. Add onion powder, salt and black pepper to taste. Adding a mild picante sauce might widen the range of flavor. Mix and refrigerate overnight. Serve chilled.
